It’s fall which means that Americans’ favorite seasonal flavor is back.. Pumpkin. From lattes, to yogurt, to lotion, to vodka.. There is now a pumpkin flavored variety of everything. Well this is what introduced Trader Joe’s Pumpkin Waffle & Pancake Mix into my home.. My roommate has been making these things and wow they can even make this strictly summer loving girl begin to love fall. However I knew that I must do what I always do with food and find the healthiest, lightest version of these possible while still maintaining that delicious fall taste. So this morning I whipped these up and can I just say YUM and GUILT-FREE, GRAIN-FREE, GLUTEN-FREE?!! Simply ah-mazing. I must say though these are more like crepes than pancakes and you have to be careful not to burn them while cooking. However I kind of liked the crepe taste to them. And truly you could mix the almond butter and honey into the pancake mixture or mix them together as the “syrup” which is what I did and HOLY YUM!!
- 2 eggs
- 1/2 cup organic pumpkin
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp vanilla extract
- “pinch” of baking soda
- For topping: (1 tbsp. almond butter, 1 tbsp. honey, dash of cinnamon)
- Whisk ingredients together
- Pour 1/4 cup of batter into skillet for each pancake & flip when bubbles begin to form on surface
- Mix almond butter & honey together in bowl, then heat for 30 seconds in microwave. Drizzle on top of pancakes with a dash of cinnamon.
